Banana Bread - Bread Machine recipe


I purchased several banana's last week when I was able to get them on sale,
knowing we wouldn't be able to eat them all.  However, I had planned on
making some banana bread.. so it worked out great.

So I was able to make 2 loaves of banana bread with the uneaten banana's.


























I use my bread machine for Banana Bread..
Recipe:
2 cups flour (all purpose or I sometimes use bread flour)
3/4 cup white sugar
3 Tbsp Veg. oil
1/2 tsp baking soda
1 tsp baking powder
2 eggs (lightly beaten)
3 banana's (well ripened and mashed up)
1/2 tsp of cinnamon (just because we like cinnamon!)
I put all the above ingredients into my bread machine, turn it on the dough setting and let it
do the mixing.. for up to 5 minutes until it is well combined.  I usually have to use a rubber
spatula and go around the sides and make sure the flour is all combined well.  After I am sure it
is well mixed, I stop my bread machine.  Then I put it on the bake setting.  I let it bake for 1 hour,
then I check it to see if it is done, I usually start the bake cycle again.. and let it bake up to about 15 additional minutes.
When done, remove from machine, place on a cooling rack to cool before slicing. (if you can wait that long) :0)

other options: You can also toss in some raisins or nuts if you'd like to add that to your bread. :0)
*Time to bake may vary depending on your bread machine and how you like your bread. Just make sure it is done throughout. :0)
