Whats for Dinner.. (comfort food)

Yummy Comforting Chicken recipe..  

1 lb boneless skinless chicken breast
1 medium onion - sliced into rings and seperated
1 1/2 cups frozen baby carrots (thawed)
1/2 cup butter (or margarine)
1 can small whole potatoes (drained)
1 Tablespoon dried parsley flakes
1/2 tsp salt
1/4 tsp pepper

In large skillet cook chicken, onion, and carrots in butter until chicken is lightly browned/done. Add potatoes. Cover and cook over medium heat for about 10 minutes or until carrots are tender. Add cream, parsley, salt, and pepper. Reduce heat. Simmer, uncovered for 10 minutes or until slightly thickened.
Yields about 4 servings..

I changed it up, of course.. :0)
I don't use butter when I make it, I just used a splash of olive oil.. and didn't pay much attention to the amounts.. :0)  I used a pkg of chicken tenderloins, a bag of frozen crinkle cut carrots (don't really have to thaw them & they cook faster),
I diced up my onion because it's easier in my opinion, and onions are less obvious to the picky eaters! :0)
and I used 3 cans of whole potatoes and cut them up into bite size pieces.. Oh, and I didn't use the parsley.
Then just added in the heavy whipping cream and Salt and pepper to taste.
It was very good, and made quite a bit... so we will have some yummy leftovers!
