Freezer Cooking | 3 Simple Chicken Freezer Meals

Good Morning!

I had a package a chicken that was around 5 lbs and I chose to use it to prepare some meals
for our freezer.

I try to keep a few meals on hand in the freezer ready to go so that on those days when we 
are really busy, or just want something fast we have something that can simply be warmed up in the oven
and ready to go in no time!




I started by cooking the chicken in my pressure cooker which doesn't take very long at all, and then it 
was time to move on to the freezer meal prep!


I started by making Chicken Fajita's.



I placed some of the chicken into a large skillet with some olive oil and then I used a shortcut in making the fajitas by simply adding a bag of frozen bell peppers/onions blend.   

It saves so much time, and is actually easier on the budget than buying fresh as well, but you could certainly use whatever bell peppers/onion blend that you prefer. 

I added in several spices and this meal was ready to go! So simple!

Spices I used: Onion Powder, Garlic Powder, Cumin, Paprika, Chili Powder, Pepper. 

I placed a little over half of the mixture into a foil pan, covered it and labeled it for the freezer,
and we used the rest for lunch!

The next meal I made was a Chicken Broccoli Riced Cauliflower Casserole.. which is actually a low
carb take on Chicken Broccoli Rice Casserole.    This is the second time I have made this one in a short time and my daughter and I really like this one.  

I used broccoli, riced cauliflower, cream cheese, chicken, spices, and some cheese..

The last freezer meal I made was a Chicken Bacon Ranch Casserole. 
I made this one because our daughter really likes chicken bacon ranch pizza, so I thought why can't I turn that into some sort of casserole so after some searching/brainstorming this is what we came up with.. and it is definitely a keeper.   My husband has told me more than once he really liked it so I consider that a win!

I used chicken, a little broth, some cream cheese, packet of ranch seasoning, pepper, cheddar cheese, and of course bacon! :0)

It is so nice to feel like I am prepared with meals ready to go in the freezer on the busy days,
or days I would like to just make dinner quick!
